You could describe Brian Stillwater of Stillwater Artisanal Ales as a Vagabond, Gypsy Brewer, Lone Ranger, whatever you'd like. But one thing is sure, he's garnering a cult following because of his unconventional brewing method and his completely uncompromised brews.
He parallels his brewing method from that of his music days as a globetrotting DJ. The breweries he uses around the world are his studios and he is a visiting artist. Wherever his beer is made takes on a little flavor of the location it's brewed in and he uses whatever ingredients he feels are appropriate to achieve his goal. He does not set any limits on the beer he crafts which is undoubtedly the reason it is so so good.

over the ages the term 'cellar door' has numerously been referred to as the most beautiful term in the English language. upon setting out to create the first summer addition to the Stateside line up of ales; the feeling that almost instantly came to me was that of beauty & cleansing. many summer offerings tend to lack the complexity of their bigger, colder season counterparts; so my goal was to craft an ale of extreme balance with a delicate complexity that allows for contemplation while also providing quaffable refreshment. starting with a base of German wheat & pale malts this crisp slightly hazy foundation was then accented with a blend of Sterling & Citra hops providing a intricate blend of herbal grass & tangerine citrus flavors and aroma. to pull this all together and to complete the 'cleansing' aspect of my vision i gently finished the ale off with a touch of white sage, lending a mild earthy spice character to the blend. of course let's not forget our house saison yeast that brought all the elements together leaving a dry yet intricate finish.

ok, we been busy 'round these parts (and beyond) and have some pretty decent news to share.

first we have a collaboration dubbed the "Channel Crossing Series" with the Baltimore classic Oliver Ales; a project aimed to construct what we are considering calling a Belgian Bitter, or perhaps an ESB (Extra Special Belgian), or who knows what.. brewed on an old Pugsley system and pitched in open fermenters with our house saison strain (and thankfully a little slurry from our friends at the Brewers Art to help kick things in bit faster).. so far, so great and we have a very cool and actually quite educational release party planned for May 20th at the Pratt Street Ale House.

next up was a match making deal from our friends at Bella Vista Distribution in Philly. they asked (perhaps demanded) a collaborative effort with myself and Matt Allyn at the Voodoo Brewery in Meadville, PA. this turned out to be an completely epic day that started with a nearly 12 hour commute for myself and a brew day that resulted in multiple stuck mashes. all travel and delays aside it was great time spent with excellent company. the beer? yeah.. well, it's a wheat beer, but its quite dark and we decided to abuse a blender and added a bunch of pureed raisins, hibiscus, juniper, rose hips, and schisandra berries. excited.

so that's 2 collaborations, more Stateside including a new offering in the series called 'Cellar Door'. a beer that genuinely represents my view of refreshment; dry, crisp, citrus, grass, slightly herbal.. at least that's what the pilot batch i am sipping tastes like.

We just wanted to thank everyone that came out over the weekend to Max's 6th Annual Belgian Fest and helping us drain the 3 inaugural casks of Stateside Saison. In fact on Friday we were one of the only beers to run out and the 2 casks on Saturday were gone by mid-day!

The response was tremendous and we can't wait for the official Mid-Atlantic launch of the product starting mid to late March.

We are honored to say that the official debut of Stillwater Artisanal Ales Batch #1 of "Stateside Saison" will debut on Saturday Feb. 13 at Max's Annual Belgian Fest (Baltimore, MD) in the form of 2 rare casks. One dry-hopped and another dry-hopped with french oak added.

Last week Brian kicked off the first double batch of Stateside Saison. Nearly 1 ton of European malts gave their lives for this inaugural batch, and fermentation is well underway.

Watch for draft to hit MD, DC, Philly, and NYC by late March. 750ml bottles will follow in select cities nationwide.

Release parties are in the works (contact if interested).

On Monday, January 25 Beer Table in Brooklyn, NY will be hosting a tasting of beers from 12% Imports followed up with a sneak peak (and taste) of some of the soon to come releases from Stillwater Artisanal Ales.
